Danno's Kickin Chicken Riggies

A spicy, creamy pasta dish native to the Utica-Rome area of New York State.


Instructions

1. Boil Water & Preheat Oven to 375:


- Get a large pot of salted water boiling for the rigatoni (4 quarts per 1 lb of pasta). Preheat oven to 375°F


2. Prepare Chicken or Sausage:

Hand-trip boneless chicken breasts to remove any excess fat. Add chicken breasts to shallow roasting pan and add enough Frank's Red Hot Sauce to lightly coat the breasts. - Place in oven for ~45 minutes or until internal temperature has reached 165°F/80°C - Move to step 3 while chicken is cooking - Once finished remove from oven and cut chicken or sausage into bite-size pieces


3. Prepare Sauce:


In a large sauce pan, combine Crushed Tomatoes, 3 tbsp Butter, and Frank's Red Hot Sauce. - Heat with medium heat and stir frequently until sauce begins to simmer. Reduce heat to low.
